Sage, Tricolor - Salvia officinalis 'Tricolor'

Tricolor Sage, or Salvia officinalis 'Tricolor' is a small perennial evergreen plant with woody stems.

Native to the Mediterranean region, though it has naturalized in many places throughout the world, sage has a long history of medicinal and culinary use, and in modern times as an ornamental garden plant.

Tricolor Sage grows to approximately 1m tall and wide, with lilac blue flowers in late spring or summer. The leaves are oblong and grey-green in colour, although the edges are lined in cream and purple. With a textured surface on the upper side, and nearly white underside due to the many short soft hairs, these make a very attractive foliage plant to have in the border or herb garden.

Preferring light, well-drained soil and full sun, sage will often flourish all year, and should have leaves to harvest for much of the year.

As a culinary herb, sage has a slight peppery taste, and is used in to flavour fatty meats in the form of stuffings and sauces, and also adds flavour to soft cheeses and pickles.
