Salad Burnet - Sanguisorba minor

Native to Europe, Asia and North America, Salad Burnet or Sanguisorba minor is a perennial semi-evergreen plant that will provide abundant leaves for most of the year.

Growing from 30cm to 1.1m tall, Salad Burnet prefers chalky moist fertile soil, and will tolerate sun or partial shade. Producing small globe shaped crimson flowers on tall stems in summer, this herb is cultivated for it's leaf, and the flowering shoots must be removed quickly to maintain good leaf production. The leaves have a lovely mild taste, and will add depth to salads and a herby freshness when chopped into mayonnaise.
